Livestock Grading
By viewing Livestock Grading, students have the opportunity to learn the latest Feeder Cattle Grading Standards comprised by the USDA.
Four national livestock evaluators introduce the 2000 Feeder Cattle Grading Standards by evaluating and discussing 10 feeder cattle.
The cattle vary widely in frame size, muscle score and fleshiness.
Top livestock and meat specialists, including Fred Williams, Jr., evaluate 11 slaughter steers and heifers varying widely in finish (USDA YG1 to YG4, USDA QG Select to Prime), muscling, frame, size and weight.
The live cattle are discussed in detail, and then eight are slaughtered.
